Lead Meat Cutter

Compensation: dependent on experience

Position Overview: The Lead Meat Cutter is a hands on position who cuts, guides and jumps in where needed . He will supervise and manage the daily operations to improve efficiencies, yields and quality control to ultimately enhance customer satisfaction and achieve sales and profitability goals. This will be done by hiring and directing the team members assigned to the Production Line. The Lead Meat Cutter has the authority to recommend hiring, firing and promotion of team members in the department. Additional duties include fulfilling customer’s orders and maintaining proper inventory levels.

Responsibilities of the Bookkeeper: 

Serves as the Lead Meat Cutter exercising authority and leadership on behalf of the Director of Operations in administration, operations, production, quality assurance/control, facility management and human capital. Specific duties and responsibilities include:

- setting up boning, cutting and trim lines for start of day

- facilitating work orders with the right raw materials to optimize yields and efficiencies

-monitoring employee production daily

- hiring, training new employees on SOP’s, knife skills, equipment and processing methods.

-discipline and write ups when needed

- handling HR issues on the floor ie start times, abuse to bathroom breaks and or sanitation issues, pmh measurements, guidance, improvements and corrections

- solid knowledge of product codes, cuts and SQF specs

-Conducting physical inventories, tracking and communicating current stock inventory information to the Director of Operations.

-Generate increased sales and profits by promoting increased efficiency.

-Ensure all freshness codes are in compliance and properly rotated.

-Uphold compliance with all company policies and regulations pertaining to safety, sanitation, merchandising and food quality along USDA and SQF guidelines.

-Ensure employees are performing the proper inspections to meet HACCP regulations as well as conducting periodic HACCP audits.

-Control shrinkage and salvage to budgeted percents.

-Oversee all meat room activity to include directing staff duties of trimming and cutting while adhering to government and company guidelines and standards.

-Ensure employee training of all associated equipment.

-Manage all employee performance, discipline and training records.

-Ensure regular maintenance schedule is implemented.

-Manage pallet storage and tagging.

-Perform other duties as assigned by higher authority.

Controls Over The Position:

The Lead Meat Cutter reports directly to the Director of Operations.


Qualifications: 

-A High School diploma or equivalent is required.

-5 years successful experience in meat cutting of product and merchandising of perishables.

-Minimum of 1 - 3 years successful experience in a meat cutting leadership/supervisory role.

-Proven record of accomplishment of successful leadership/management experience in a similar size and scope organization.

-Proven experience and knowledge of Value Added Production, Hazard Analysis and Critical Control Points and Safe Quality Food programs.

-Excellent ability to communicate both orally and in writing to all levels of management & labor. Bi-lingual ability in Spanish preferred but not required.

-Experience in inventory control management.

-Proven analytical and strategic planning skills.

-Strong people management and talent development skills.

-Must be able to perform an unassisted lift of 55 lbs.

-Willing to work in cold, (remove wet) environments.

-Must possess a valid driver’s license.

-Must be able to maintain a high degree of patience and offer constructive criticism when necessary.

-Must be legal to work in the United States and successfully pass a background check.
