Broccoli Rabe & Pecorino Romano Sausage Recipe Ideas

How we like to serve our Broccoli Rabe:

We serve our Berkshire Broccoli Rabe sausages simply. We start by cooking our sausages on a cast iron on a stove top in order to get the seared finish grill marks. To finish the sausage, we then place the cast iron in the oven and bake to an internal temperature of 160 degrees. Be sure to keep an eye on the oven, you don't want to overcook or dry out the sausage.

We then choose a pasta (your choice) to pair with the sausages and season simply with olive oil, parsley, salt & pepper. We choose light flavors to pair with this sausages since a heavier sauce can overpower the flavors of the pecorino & broccoli rabe.

Broccoli Rabe Lasagna

Ingredients Needed: Berkshire Black Broccoli Rabe Sausage, 1 lb. Broccoli Rabe, Salt, Pepper, Red Pepper Flakes (Optional), Olive Oil, Garlic Powder, Butter, All-Purpose Flour, Whole Milk, Parmesan Cheese, Lasagna Noodles

Start by rinsing the Broccoli Rabe, once finished place into a pot of boiling water and cook until bright green or wilted. Remove the broccoli rabe from the pot and place into cold water to chill. Once it is cooled off, finely chop the broccoli rabe and add salt, pepper and garlic powder to taste.

Next, take the Broccoli Rabe Sausages out of the package, cut down the center and remove the casing. Place the broccoli rabe sausage meat into a skillet with a small amount of olive oil and cook until the meat is golden or has a faint pink color.

To make the mornay sauce, you will need ¼ tablespoon of butter, ¼ cup of all-purpose flour, 2 ½ cups of whole milk and 1 cup of grated parmesan. In a saucepan, melt butter, add flour and whisk until fully combined. Whisk until the mornay starts to turn slightly darker in color. From there, add milk and bring to a simmer. Cook until the sauce thickens, once finished remove from heat and season with salt and parmesan until melted.

Once finished, assemble the lasagna in a baking dish. Add a layer of mornay to the bottom and add the cooked lasagna noodles on top. Top with the broccoli rabe sausage meat, broccoli rabe and mornay and layer 2-3 times. Add a layer of parmesan cheese to the top of the dish and bake for 35-40 minutes at 375 degrees.
